Mediterranean Pasta Salad with Red Onion

Pasta Salad
 350 g spiral pasta
 1 cup cherry tomatoes, halved
 1 cucumber, diced
 1 red onion, peeled and thinly sliced
 1 ½ cups of mixed greens (combination of baby spinach and rocket)
  cup fresh green herbs (combination of parsley and mint), chopped
 1 cup mixed olives, pitted
 ¼ cup roasted red bell peppers
 Salt & pepper to season
 Feta and basil leaves to garnish (optional)
Red Wine Vinaigrette Dressing
  cup extra virgin olive oil
  cup red wine vinegar
 1 tbsp dried oregano
 1 clove garlic, minced
 2 tbsp Dijon mustard
 2 tbsp honey
 Salt & pepper to season

Cook pasta in salted boiling water until al dente.

Drain the pasta and allow to cool.

While the pasta is cooling make the red wine vinaigrette. Combine all the ingredients in a sealed jar and shake vigorously until well combined.

Combine the cooled pasta, tomatoes, cucumbers, red onion, greens, herbs, olives, and red peppers in a large salad bowl.

Drizzle the dressing on the salad then gently toss all the ingredients together. Top with basil leaves and feta if desired.

Serve immediately.
