Red Onion Relish

 2 large red onions, thinly sliced
 1 Granny Smith apple, grated
 ¼ cup raisins
 ¼ cup sugar
 ¼ cup vinegar
 ½ tsp salt
 Spices (cloves, nutmeg)

Heat a heavy-based saucepan over a medium heat.

Add in onions and gently sauté in extra virgin olive until very soft.

Add the apple, raisins, sugar, vinegar, spices and salt. Heat gently, stirring until the sugar has dissolved, then bring to the boil.

Reduce the heat and simmer, uncovered for about 35 minutes, stirring occasionally, until the mixture is thick and pulpy, with no excess liquid.

Spoon the relish into warm, clean, dry jars. Leave to cool slightly, add the lids on and store in the fridge.
