Brown Onion Quick Pickles

Brown Onion Quick Pickle

Ingredients

1 large brown onion, sliced thinly
200 ml Apple cider vinegar/water (equal parts)
1 clove garlic, crushed
½ tsp mustard seeds, lightly toasted
½ tsp cumin seeds, lightly toasted
2 tbsp sugar (to taste)
Fresh thyme

Method

Peel and thinly slice the onion, then tightly pack into a 500ml jar, followed by the crushed garlic and fresh thyme.

Warm a small frying pan over a medium heat then add in the mustard and cumin
seeds. Toast briefly until fragrant (about 1 min) then add to the jar with the onions.

Add the vinegar, water and sugar to a saucepan and heat to simmering.

Pour the heated liquid mix over the onions and let them sit on the bench for 30 mins.
The onion will shrink so if you had some onion you couldn’t fit in the jar add them in.

Put a lid on and add the jar in the fridge. You can eat these straight away, but they’ll taste better in a couple of days.

Serve and enjoy over anything savoury.
