Fritters with Pickled Onions

Onion Fritters

Ingredients

Fritters:
1 kg zucchini, coarsely grated
2 tsp salt
200 g halloumi cheese, grated
2 brown onions, peeled and grated
2 eggs
150 g breadcrumbs
¼ bunch dill, chopped fine
¼ bunch parsley, chopped fine
Small pinch of salt and pepper
Olive oil for frying
Fresh oregano, for garnish (optional)
Fresh lemon, for plating
Pickled red onions:
2 red onions, peeled and sliced thinly
2 cups water
2 cups white vinegar
1 cup sugar
1 tsp salt
Whipped feta:
250 g feta
180 g Greek yoghurt
1 garlic clove
½ lemon, juice only
20 ml olive oil
Salt to taste

Method

First start the fritter mix. Mix zucchini and salt together and sit over a sieve for at least 30 mins. We want to extract all the liquid out.

Meanwhile, pickle the onions. Heat all the ingredients except for the onions in a small saucepan. Add the onions and let it pickle for at least 30 mins.

Whip the feta by adding all the ingredients into a blender and blend on high until smooth and creamy.

Heat the frying oil in a medium saucepan. Mix all the remaining ingredients of the fritter mix together. Squeeze all the liquid out of the zucchini and add to the mix.

Fry the fritters in small round balls until golden on both sides.

To plate up, cream the whipped feta on your serving platter. Pile up the fritters, lemon, oregano on top and pickled onions on the side.
